Pre-heating the pan at medium-low or medium is best. To find out whether your pan is at the right heat level, you can do the water test. Sprinkle a few drops of water onto the pan. If the droplets are dancing around, the pan is ready.

Then, add in some butter, ghee or oil. If it is too hot, the butter may burn. So, that is why you should try to get the temperature just right. Once the butter has melted, add in the eggs. Wait for the eggs to cook a little at the edge. Then, tilt the pan so that the eggs will cook all round. Add in cheese and other ingredients to finish off your omelette.
